– Can you please introduce yourself in a few words.
Hi my name is Daniel Warburton, I like coffee, bikes, music, psychology, F1 and walks on the beach at sunset.

– When did Honor open and what’s the story behind?
Honor opened on the 7th of February 2015. In our move to Paris to open a restaurant with good coffee we were approached by Coutume to do an outdoor coffee shop in a courtyard space. The location and new type of concept captured our imagination enough to be put the restaurant idea on pause and explore this concept, bringing speciality coffee to luxury area without any coffee shops nearby.

– What’s your specialty and what makes you different?
Being Paris’s first outdoor independent specialty coffee shop makes us fairly different. I would say our speciality is flavour and experience. In everything we do we aim to make it as tasty as possible. Not only in the coffee we choose and serve to also our sweet and savoury food. The novel space and focus on service completes the sensory experience.

– What was your first coffee experience?
In Australia grinders are common in the supermarket coffee isle. As a kid I remember begging to buy some coffee and make in our 1970s style percolator, which, in fact they generally over brew coffee making it very bitter. I remember loving the smell but I couldn’t drink it.

– What was your best coffee experience?
This is a difficult one as often it’s about context. I remember offering coffees to the whole family on Christmas morning. We only had a hand grinder and an Aeropress. It took 45mins to serve everyone but it was worth it.

– Do you prepare coffee at home ? If yes, what method do you use?
Yes with either Aeropress, French Press or sometimes an old skool filter cone from Monmouth.

– How do you like your coffee? Black, sugar and milk, iced, vietnamese style,…?
I like it tasty.

– How would you qualify yourself as coffee drinker (occasional, heavy, addict…)?
Daily in heathy moderation.

– Do you have another passion or a hobby besides coffee?
Cycling, brewing beer, baking sour dough bread and djaying.

– What other place would you recommend, anywhere in the world?
The Bottle of Milk, Lorne, Australia. The Great Ocean road provides an excellent setting for a tasty coffee.

– What would you say to people who don’t know much about coffee?
Drinking good coffee is an extremely pleasing experience and there is much to know about the complexity of coffee. Be careful though as the rabbit hole is very deep, and once you go in there is no way out!
